Fajeto or simply Gujarati Mango Kadhi is a sweet and sour delicious dish from the region.
I was simply amazed at the flavors. Was not sure if I will be able to taste mango in the Kadhi but not only I did but loved it too.
My house is filled with the fragrance of the tadka and I can’t wait for my family to relish it with rice.

Directions to make Fajeto-
Recipe from Archanas Kitchen
Ingredients:
1 cup mango ripe pured
1 cup curd
3 tbsp besan
1/2 tbsp red chilli powder
1/2 tsp turmeric powder
1/4 tsp hing
Salt to taste
2 tsp gur
For tempering-
1 tbsp ghee
1 tsp grated ginger
1/2 tsp rai
1/2 tsp jeera
1 inch dalchini
1 dry red chilli
2 green chilli slit
6 curry leaves torn by hand
2 tbsp chopped dhaniya
Method:
In a large heavy bottom saucepan mix in all the ingredients like curd, mango puree, besan, red chilli powder, turmeric powder, salt, hing, gur. Add 2 glasses of water.
You may need to add water to adjust the consistency as this Kadhi is supposed to be a little thin that what we have in Punjabi kadhi.
Now in a pan heat ghee, pour in all the ingredients mentioned under tempering. Cook till all the spices release their aroma.
Pour over the kadhi and enjoy.

Mango Kadhi! Why didn’t I think of this earlier! The pictures are amazing and the kadhi sounds totally yum. I need to try this out as soon as possible, with seasonal ripe mangoes. Thanks for sharing this lovely recipe!

I have heard about Fajeto and even bookmarked it too to try but never got chance as mangoes are always finished before trying in any dish. You have presented it so beautifully Avin.

Fajeto looks so delicious. The colour of kadhi is so tempting, looks like a punjabi kadhi but this mango kadhi I never tasted before but this time when mango comes I love to try it. Delicious share.

Avin not only am I drooling but also missing my mum after reading your recipe. Whenever my mum made aam res she would add some to the kadhi and also would add the mango seeds. Simmering with the mango seeds, the kadhi would have slight hint of the mango taste. Nice khata and meetha.

What a beautiful dish and lovely vibrant color! The mangoes are not yet in season here, we do get them but they are not so good. Will wait for the good ones to try out this recipe.
