Just because I was in 4-H does not mean that I was milking cows and just because I'm from Southern Idaho does not mean that I was digging potatoes out of the ground either.

So what else would you be doing in 4-H? 4-H was what they had back in the day when you were poor and you could join a club and I was those things.

So that's what I did and we lived in a farming community, okay, I'm gonna, make pies and milk chickens or no no chicken milking no chickens were harmed by me.

Not back then anyway, hi guys welcome back to CJ's keto kitchen.

My name is Sarah.

If you are looking for homestyle recipes made ketogenic, then you've come to the right Channel and this one is particularly home style tonight.

We're going to be making keto no-bake cookies, so come along with me and let's get started.

So I could wax nostalgic all day.

Long about these cookies.

No bake cookies have been around since depression times, but this particular version was a family favorite of mine.

It was my dad's favorite, cookie and, as I'm sure, you'll probably see in our gush I did learn to make the non-keto version of these in 4-H, traditionally they're made with oatmeal, but we're going to be putting keto ingredients instead.

So let's go ahead and see what we need.

So you are going to need a medium-sized bowl for mixing up your non-bake ingredients.

Two tablespoons of butter, which we are going to melt I, have vanilla extract here.

I have three tablespoons of powdered natural sweetener, which is erythritol monk fruit in this case, but use whatever powdered sweetener that you enjoy.

That is low carb.

We are also going to be using cocoa powder.

This is just 100 cacao, unsweetened natural cocoa powder.

We are also going to be putting in some unsweetened coconut flakes and to mine I'm, going to be adding some freshly chopped roasted peanuts.

These are optional, but I'm excited about it because they provide wonderful texture.

You are also going to need some kind of tray or dish.

These are not going to be baked, so you can use whatever kind that you want just to hold your no-bake cookies.

While they chill- because these have very soft ingredients, we're going to need to put them in the refrigerator or freezer for a little while just to help them set up, and you will also store them there as well.

I have placed parchment paper on my baking tray.

You could also use a silicone mat, but I would recommend using at least either one of those too.

Let's go ahead and get started so I'm just going to put the melted butter in the bottom of my bowl into my butter I'm, going to go ahead and add my vanilla extract, I'm, also going to put my natural sweetener in there and I'm and I'm dissolving in our butter, now I'm going to add the cocoa powder, and you want two tablespoons of this and you don't need it to be firmly packed just lightly once again, I'm just going to go ahead and dissolve that into our warm butter.

This helps all of our ingredients come together and not be globby okay.

So our next ingredient is going to be our peanut butter.

I have one cup here and I just have smooth natural peanut butter without any sweetener in it.

If you wanted to use chunky, peanut butter, you could do that as well and then skip the added peanuts that I'm going to be putting in, because you would already have chunky nuts in there optionally.

You could also use a different type of nut butter if you don't care for peanuts or if you have a peanut allergy start stirring that around.

So as I mentioned when I was talking about the parchment paper and my baking tray, this is going to be a very soft cookie, so we are going to need to put it in the freezer for a few minutes to help it set up, and you also will have to keep this no-bake cookie refrigerated because of the soft consistency that is the nature of the butter and the peanut butter.

Okay, so there's our lovely smooth mixture now we're going to add some texture, and that is going to give us our cookie flavor and texture and taste.

So the first thing that I'm going to add is the unsweetened coconut flakes I just found mine at Walmart, but you can get them wherever you'd like.

Sometimes they come in a larger flake.

So if you want something, that's a bit smaller, you could always grind them up, but these are a nice small size already and I am going to be adding two thirds of a cup into my cookie batter.

So traditionally, no bake cookies are made with oatmeal and they also have a granulated sugar base that you would boil to make like a syrup, and we are skipping that step here, because this is really no cook no bake, so I'm going to be adding in about a third of a cup of my chopped roasted peanuts as I stated in the beginning.

This is totally optional, but I like the texture that is going to give our no-bake cookies all right.

So I am just going to stir this all together and get everything well Incorporated, and really this recipe would be a good vehicle for other items that you might enjoy.

Other roasted nuts would be really good here, but this gives a really pretty chalky texture, and so, if you're looking for something that has some texture and some crunch, especially when you first start the ketogenic lifestyle, this is really helpful, because this acts, basically as a fat bomb, gives you that little bit of fat mixed with some protein all right.

So we have everything combined, I'm going to go ahead and clean off my spatula, then I am going to be using a cookie baller to make my no bake cookies and place them on the tray.

But you could just use a couple of spoons.

If you wanted to, you could make them any shape.

You want optionally, you could press them into silicone molds if you wanted to do that as well.

So I am just going to take my cookie baller and, as I said before, this is going to be very soft.

We are going to need to freeze these in order to make them into a cookie shape so that they're easily handled so I'm going to go ahead and do likewise until I have completely emptied my bowl and then I'm going to pop these into my freezer, for probably about 15 to 20 minutes and then I'll be able to take them off the parchment paper I like using a cookie baller because it keeps them relatively the same size but, as I said before, you could just use a spoon if you wanted okay, so I fit 12 on my baking sheet.

I still have a little bit of cookie batter left that I will be placing on another sheet and I will be right back after I pop this in the freezer.

All right here they are all done and I did end up with 16 no-bake cookies I did the other ones on a plate, so let's have CJ, give them a taste for us, hi hi, all right.

Let's try these no bake cookies, real good, really um crunchy, the uh I think the peanuts do add another textural component, I, don't really taste the coconut I mean I, see the coconut all right, taste them as far as I'm chewing it texture, but I, don't taste it as far as coconut I know, you're, not like big coconut fan, and it's really gotta bold chocolate, taste, so I think I would made it a little sweeter.

Okay, because I'm thinking that the peanuts and stuff might have even dampened down the sweetness just a little bit.

But anyway, it's really good I.

Think people like it.

We don't need to always have a bunch of stiff stuff.
